Ingredients

  • 8 slices bacon
  • 1 cup chopped onion
  • 4 cups hash brown potatoes
  • 1 cup water
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 3/4 cups milk
  • 1/2 teaspoon salt
  • pepper to taste
  • 2 tablespoons chopped parsley

Instructions

  1. Fry bacon until crispy, then sauté onion in bacon drippings and drain.
  2. Add hash brown potatoes and water to the pot, cook until potatoes are tender.
  3. Stir in cream of chicken soup, sour cream, milk, salt, and pepper.
  4. Heat thoroughly but do not boil the chowder.
  5. Add more milk if the chowder becomes too thick before serving.
