Ingredients

  • 1/4 cup yellow cornmeal
  • 1/4 cup all-purpose flour
  • 1/4 cup Parmesan cheese grated
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/8 teaspoon ground red pepper
  • 1 egg white
  • 2 tablespoons skim milk
  • 4 (4 oz) catfish fillets
  • 1/2 teaspoon sesame seed
  • cooking spray

Instructions

  1. Combine the cornmeal, flour, Parmesan cheese, paprika, salt, black pepper, and red pepper; set aside.
  2. Whisk together the egg white and skim milk.
  3. Dip each catfish fillet into the milk mixture, then dredge in the cornmeal mixture.
  4. Place the coated fillets on a foil-lined baking sheet coated with cooking spray.
  5. Sprinkle the fillets with sesame seed and coat each with cooking spray.
  6. Bake in a preheated oven at 400°F (200°C) for about 20 minutes or until the fish is cooked through and golden brown.
