Baked Celery Loaf

Ingredients

  • 1 1/2 c. celery, sliced
  • 1/4 bunch parsley
  • 3/4 c. walnuts
  • 1 large white onion
  • 1/2 green pepper
  • 1 c. fine whole wheat crumbs
  • 2 eggs, slightly beaten
  • 3 Tbsp. margarine
  • 1 tsp. salt
  • 1 1/2 c. milk

Instructions

  1. Put celery, parsley, walnuts, onion, and green pepper through a food chopper, using a coarse blade.
  2. Combine the remaining ingredients and fold into the celery mixture.
  3. Transfer the mixture into a greased loaf pan.
  4. Bake in a preheated oven at 350°F (175°C) for about 45 minutes or until firm and golden brown.
  5. Allow to cool slightly before serving.
