Ingredients

  • 1 (1 lb. 10 oz.) can whole green chilies
  • 1/2 lb. Monterey Jack cheese, cut in strips
  • 1/2 lb. Cheddar cheese, grated
  • salt
  • pepper
  • liquid red pepper
  • 5 large eggs

Instructions

  1. Slip a strip of cheese into each chili pepper.
  2. Arrange half of the chilies in a baking dish; sprinkle with half of the grated cheese.
  3. Repeat layers, ending with cheese on top.
  4. In a bowl, mix eggs, milk, and flour until well combined.
  5. Pour the egg mixture over all the chilies and cheese in the baking dish.
  6. Bake uncovered in a 350°F (175°C) oven for about 45 minutes or until a knife inserted in the center comes out clean.
