Ingredients

  • 1/2 cup dry beans
  • oil
  • 1 large onion
  • 2 cloves garlic
  • 1 tablespoon chili powder
  • 1/2 teaspoon cumin
  • 1 green pepper
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup cornmeal
  • 2 teaspoons baking powder

Instructions

  1. Saute onion and garlic in oil in an oven-proof skillet.
  2. Leave half of the sauteed mixture in the unheated skillet and transfer the other half to a medium bowl.
  3. In the bowl, add chili powder, cumin, green pepper, salt, cooked beans with stock, beaten egg, cornmeal, and baking powder. Mix well.
  4. Pour the mixture into the skillet over the onion mixture, without stirring, so the onion stays on the bottom.
  5. Bake at 350°F for 25 minutes.
