Baked cod fillets topped with a rich tomato-based sauce flavored with onions, celery, thyme, and a touch of sweetness, perfect for a hearty, flavorful seafood meal.

Ingredients

  • 1 onion, minced
  • 1/2 cup minced celery
  • 6 tablespoons butter
  • 2 cups solid-pack tomatoes, broken up
  • 1 bay leaf
  • 1/4 teaspoon thyme
  • 1 tablespoon brown sugar
  • 2 tablespoons white wine vinegar
  • salt and pepper to taste
  • 2 pounds fresh cod, haddock or halibut fillets

Instructions

  1. Saute onion and celery in butter until golden.
  2. Add crushed tomatoes, bay leaf, thyme, brown sugar, white wine vinegar, salt, and pepper to the sautéed vegetables.
  3. Simmer the sauce covered for 30 minutes.
  4. Preheat oven to 350°F (175°C).
  5. Cut the fish fillets into serving pieces and place in a greased baking dish.
  6. Pour the sauce over the fish pieces.
  7. Bake for 30 minutes or until the fish flakes easily.
