Ingredients

  • 12 oz. can shoepeg white corn, drained
  • 2 Tbsp. butter, melted
  • 1/3 cup Cheddar cheese, grated
  • 1 Tbsp. Parmesan cheese
  • 2 oz. green chilies, drained and chopped
  • 1/3 cup evaporated milk
  • 1/2 cup Ritz cracker crumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine all ingredients in a bowl: drained shoepeg white corn, melted butter, grated Cheddar cheese, Parmesan cheese, chopped green chilies, evaporated milk, and Ritz cracker crumbs.
