Ingredients

  • 2 lb. cod or haddock fillets
  • 4 potatoes, peeled and diced into small cubes
  • few chopped celery leaves
  • 1 bay leaf
  • 1 1/2 Tbsp. salt
  • 4 whole cloves
  • 3 medium onions, sliced
  • 1/2 c. butter or margarine
  • 1/4 tsp. dried dill seed
  • 1/4 tsp. pepper
  • 1/2 c. white wine or dry vermouth
  • 2 c. boiling water
  • 2 c. light cream or half and half

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a very large casserole or two 2 1/2-quart casseroles, combine all ingredients except the cream: fish, potatoes, celery leaves, bay leaf, salt, cloves, onions, butter, dill seed, pepper, white wine, and boiling water.
  3. Cover the casseroles and bake for 1 hour.
  4. Remove from oven and heat the cream to scalding.
  5. Add the hot cream to the chowder and serve.
