Baked Minestrone Soup
Hearty baked minestrone soup combines tender beef, vegetables, pasta, and savory broth for a comforting meal perfect for family dinners or cozy gatherings.
Ingredients
- 1 1/2 lb. lean beef stew meat or lean ground beef ⓘ
- 1 cup chopped onion ⓘ
- 1 tsp. minced garlic ⓘ
- 2 Tbsp. olive oil ⓘ
- 1 1/2 tsp. Italian seasoning
- 1/2 cup sliced black olives with liquid ⓘ
- 1 cup small macaroni ⓘ
- 1 tsp. salt ⓘ
- 1 tsp. pepper
- 3 (10 1/2 oz.) cans beef broth
- 1 large can tomatoes (undrained) ⓘ
- 1 can kidney beans (undrained) ⓘ
- 1 1/2 cups sliced carrots ⓘ
- 2 cups sliced zucchini squash ⓘ
Instructions
- Combine beef, onion, garlic, salt, pepper, and olive oil in a large oven pan.
- Toss to coat the meat evenly and brown, uncovered, in a hot oven at 400°F.
- Add beef broth, water, and Italian seasoning to the pan.
- Cover and cook for 1 hour until the meat is almost tender.
- Stir in tomatoes, kidney beans, olives, carrots, and macaroni.
- Sprinkle zucchini slices on top.
- Cover again and return to the oven for 40 to 45 minutes longer until the macaroni is tender.
