Ingredients

  • 10 oz. frozen asparagus spears
  • 1/4 cup chopped onion
  • 3 eggs
  • 2 tablespoons butter
  • 1/2 cup milk
  • 2 tablespoons minced parsley
  • 1/2 teaspoon sweet basil
  • 1/2 teaspoon salt
  • 1 pound canned or flat cans salmon, flaked

Instructions

  1. Cook the frozen asparagus spears and drain.
  2. Saute chopped onion in butter until tender.
  3. In a bowl, combine eggs, milk, minced parsley, sweet basil, salt, and cooked onion.
  4. Fold in flaked salmon into the egg mixture.
  5. Reserve 6 asparagus spears; place the rest in a pastry shell.
  6. Pour the salmon mixture over the asparagus in the pastry shell.
  7. Top the mixture with the 6 reserved asparagus spears.
  8. Bake in a 425°F oven for 35 to 40 minutes or until set.
