Ingredients

  • 2 lb yellow squash
  • 1 large onion
  • 2 large beaten eggs
  • 1 cup grated cheese
  • 2 cups crushed Ritz crackers
  • 1 cup evaporated milk
  • 2 Tbsp butter

Instructions

  1. Cook squash and onion; drain and mash.
  2. Add beaten eggs, grated cheese, evaporated milk, and butter; mix well.
  3. Pour mixture into a greased casserole dish.
  4. Top with 1/4 cup crushed Ritz crackers.
  5. Bake at 350°F, uncovered, for 45 minutes to 1 hour until golden and bubbly.
