Ingredients

  • 1 lb. cod or white fish fillets
  • 1/2 c. crushed corn flakes
  • 4 Tbsp. melted butter
  • 3 Tbsp. lemon juice
  • 1/2 c. white wine
  • 1/2 tsp. thyme
  • 1/4 tsp. salt
  • 1/4 c. Parmesan cheese
  • 1/2 tsp. tarragon
  • 1/8 tsp. pepper

Instructions

  1. Melt butter in a baking dish.
  2. Place the fish fillets in the dish and drizzle lemon juice over the fish.
  3. Sprinkle thyme, tarragon, salt, and pepper over the fish.
  4. Pour white wine over the fish.
  5. Mix crushed corn flakes with Parmesan cheese.
  6. Sprinkle the cornflake mixture over the fish.
  7. Bake in a 425°F oven for 20 minutes.
