Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tsp. lemon pepper seasoning
  • 1 1/2 tsp. extra virgin olive oil
  • 1/3 c. balsamic vinegar
  • 1/4 c. chicken broth
  • 2 garlic cloves, minced
  • 4 tsp. butter
  • parsley sprigs
  • cherry tomatoes

Instructions

  1. Lightly pound chicken breasts to 1/4-inch thickness using a meat mallet or similar flattening utensil.
  2. Press lemon pepper seasoning evenly on both sides of each chicken breast.
  3. In a large frypan, heat extra virgin olive oil over medium heat.
  4. Add chicken breasts to the frypan and cook, turning once, for about 7 minutes or until a fork can be inserted easily.
  5. Remove chicken to a warm serving platter and keep warm.
  6. In a medium bowl, mix together balsamic vinegar, chicken broth, and minced garlic.
  7. Add the mixture to the frypan and cook over medium-high heat, scraping up browned bits, for about 2 minutes until reduced and syrupy.
  8. Add butter to the sauce and stir until melted.
  9. Place cooked chicken on a serving dish and spoon the sauce over the chicken.
  10. Garnish with parsley sprigs and cherry tomatoes.
