Ingredients

  • 2 cups flour
  • 12 packets sweet one or fructose (equal to 1 cup)
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 1 teaspoon baking powder
  • 2/3 cup Puritan oil
  • 4 mashed bananas
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 2 eggs

Instructions

  1. Cream eggs, oil, and sweetener until well combined.
  2. Add mashed bananas, vanilla, and lemon juice to the mixture.
  3. Gradually add dry ingredients: flour, fructose, salt, soda, and baking powder.
  4. Mix until well blended and pour into a well-greased loaf pan.
  5. Bake at 350°F (175°C) for about 45 minutes or until a toothpick inserted in the center comes out clean.
