Banana Cheesecake

Ingredients

  • 5 oz graham crackers
  • 5 tbsp unsalted butter, melted
  • 2 tsp ground cinnamon
  • 1 lb cream cheese, at room temperature
  • 3/4 cup sugar
  • 3 None large eggs
  • 1 cup sour cream
  • 2 tsp lemon juice
  • 5 None ripe bananas, 3 mashed, 2 sliced
  • 1/2 cup cream, whipped
  • 1 oz dark chocolate, shaved into curls

Instructions

  1. Preheat oven to 350°F. Place graham crackers in a food processor and process to fine crumbs. Transfer to a large bowl and stir in butter and half the cinnamon.
  2. Transfer to an 8 inch springform pan. Using fingers or the base of a glass, press crumb mixture over base. Chill for 15 mins, or until firm.
  3. Using an electric mixer, beat cream cheese and sugar until smooth. Add eggs, one at a time, beating well after each addition.
  4. Add sour cream, lemon juice, mashed banana and remaining cinnamon and beat until just smooth. Pour over prepared crust.
  5. Bake for 1 hour, or until just set. Cool completely in pan and chill overnight in fridge.
  6. Turn out of pan and cut into wedges. Decorate with whipped cream, banana slices and chocolate shavings.
