  • 1 cup nonfat plain yogurt
  • 3/4 cup mashed ripe banana
  • 2 tablespoons vegetable oil
  • 1 large egg or egg substitute
  • 1 teaspoon vanilla extract
  • Powdered sugar (optional)

Instructions

  1. Preheat oven to 400°F.
  2. Spray a 9-inch square baking pan with vegetable oil spray.
  3. Combine flour, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
  4. Whisk together yogurt, banana, vegetable oil, egg, and vanilla in a medium bowl or food processor.
