Ingredients

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup mashed bananas
  • 1 teaspoon vanilla
  • 2 cups sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup sour milk or buttermilk
  • 1/2 cup chopped dates
  • 1/2 cup pecans or walnuts

Instructions

  1. Mix shortening, sugar, and eggs together thoroughly.
  2. Stir in mashed bananas and vanilla.
  3. Add sifted dry ingredients alternately with sour milk or buttermilk.
  4. Blend in chopped dates and nuts.
  5. Pour into a well-greased and lightly floured 9-inch square pan.
  6. Bake in a moderate oven (350°F) for 40 to 45 minutes.
  7. Cool the cake.
  8. Frost with lemon or orange confectioners' sugar icing or cut into squares and serve with whipped cream and banana slices.
