Ingredients

  • 1/2 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 cup mashed banana
  • 1/2 teaspoon soda
  • 1/4 teaspoon salt
  • 3 tablespoons buttermilk
  • 1/4 cup chopped nuts
  • 1/4 cup chopped cherries
  • 1/4 cup raisins

Instructions

  1. Cream shortening and sugar together.
  2. Blend in beaten egg and mashed banana.
  3. In a separate bowl, combine dry ingredients: flour, baking powder, soda, and salt.
  4. Alternately add dry ingredients and buttermilk to the creamed mixture, stirring until just combined.
  5. Stir in chopped nuts, cherries, and raisins.
  6. Pour batter into a greased 8 x 4-inch loaf pan.
  7. Bake in a 350°F (175°C) oven for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
