Ingredients

  • 1/2 cup shortening
  • 2 eggs
  • 1 teaspoon lemon juice
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 cup mashed bananas
  • 2 cups all-purpose flour
  • 1/2 cup strawberry jam
  • 1 cup chopped pecans

Instructions

  1. Cream the shortening. Add sugar, beating until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine bananas and lemon juice. Stir into creamed mixture.
  2. Combine flour, baking powder, and salt. Stir into creamed mixture. Stir in jam and chopped pecans.
  3. Spoon batter into 2 greased and floured loaf pans. Bake for 50 minutes. Cool in pans for 10 minutes before removing.
