Ingredients

  • 1/2 cup shortening
  • 2 eggs
  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 1 1/4 teaspoons soda
  • 1 teaspoon vanilla
  • 1 cup oats (quick oats)
  • 1 teaspoon cinnamon
  • 2 mashed bananas
  • 1/2 teaspoon salt
  • 1 1/2 cups hot water

Instructions

  1. First soak oats for 20 minutes in 1 1/2 cups hot water.
  2. Set aside the soaked oats.
  3. In a large bowl, mix all remaining ingredients except oats.
  4. Add the soaked oats last and stir to combine.
  5. Pour the batter into a greased 9 x 13-inch cake pan.
  6. Bake at 350°F for 25 minutes until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool before frosting with vanilla icing.
