Ingredients

  • 2 bananas, mashed
  • 1/4 cup orange juice
  • 1/4 cup margarine
  • 2/3 cup sugar
  • 1 egg
  • 2 cups flour
  • 1 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup nuts

Instructions

  1. Mix orange juice and mashed bananas in a bowl.
  2. Cream margarine and sugar until light and fluffy.
  3. Add egg and banana mixture to the creamed mixture and blend well.
  4. Stir in flour, nutmeg, baking powder, and baking soda until just combined.
  5. Fold in nuts gently.
  6. Pour batter into a well-greased loaf pan.
  7. Bake at 350°F (175°C) for 1 hour and 20 minutes or until a toothpick inserted into the center comes out clean.
