Ingredients

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 cup nuts (optional)
  • 3 eggs
  • 1 1/2 cups oil
  • 1 1/4 cups mashed banana
  • 1 (8 oz) can crushed pineapple
  • 2 teaspoons vanilla

Instructions

  1. Sift the dry ingredients together, except nuts.
  2. Mix the remaining ingredients and combine with the dry ingredients.
  3. Pour the batter into prepared loaf pans.
  4. Bake at 350°F (175°C) for about an hour or until a toothpick inserted in the center comes out clean.
  5. Allow to cool before removing from pans.
