Ingredients

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 eggs
  • 3 cups mashed bananas
  • 1 cup cooking oil
  • 1 (8 oz.) can crushed pineapple, undrained
  • 1 1/2 teaspoons vanilla
  • 1 cup chopped walnuts

Instructions

  1. Heat oven to 350°F (175°C).
  2. Combine flour, sugar, salt, and baking soda in a bowl.
  3. In a separate bowl, mix eggs, mashed bananas, oil, undrained crushed pineapple, chopped walnuts, and vanilla.
  4. Add the wet ingredients to the dry ingredients all at once, stirring until moistened.
  5. Pour the batter into a greased and floured 10-inch tube pan.
  6. Bake in the preheated oven for 65 to 75 minutes, or until the cake tests done with a toothpick.
  7. Cool in the pan for 15 minutes.
  8. Remove the cake from the pan and cool on a wire rack.
  9. Sprinkle with confectioners' sugar before serving.
