Ingredients

  • 1 to 2 small ripe bananas
  • 1 (2 layer size) pkg. yellow cake mix
  • 1 (4 serving size) pkg. banana or vanilla instant pudding
  • 4 eggs
  • 1 c. water
  • 1/4 c. oil
  • 1/2 c. chopped nuts (optional)

Instructions

  1. Slice bananas into a large mixing bowl.
  2. Beat the bananas until well mashed.
  3. Add the remaining ingredients to the bowl.
  4. Blend the mixture until combined.
  5. Beat at medium speed for 2 minutes.
  6. Pour the batter into a 10-inch well-greased and floured tube or Bundt pan.
  7. Bake at 350°F for 60 to 70 minutes.
  8. Cool in the pan for at least 15 minutes.
  9. Remove the cake from the pan.
  10. Finish cooling on a rack. Sprinkle with confectioners sugar, if desired.
  11. Optional: May be baked in a 9 x 13-inch pan for 50 to 55 minutes.
