Ingredients

  • 3 or 4 extra ripe bananas
  • 1 cup cooked mashed pumpkin
  • 3 eggs
  • 1.5 cups sugar
  • 1 cup vegetable oil
  • 5 cups all-purpose flour
  • 1 tablespoon baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground cloves
  • 2 cups chopped walnuts

Instructions

  1. Puree the bananas until smooth.
  2. Combine the banana puree, cooked mashed pumpkin, eggs, and sugar in a bowl and beat well.
  3. Add the vegetable oil and mix until incorporated.
  4. In a separate bowl, mix the all-purpose flour, baking soda, cinnamon, and ground cloves.
  5. Gradually add dry ingredients to the wet mixture, blending until all the flour is moist and just combined.
  6. Fold in the chopped walnuts gently.
  7. Pour the batter into a greased loaf pan.
  8. Bake at 350°F (175°C) for about 60 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool before removing from the pan and slicing.
