Ingredients

  • 8 oz. ground turkey or beef
  • 1/4 cup green pepper, chopped
  • 1/4 cup onion, minced
  • 1 cup tomato sauce
  • 1 teaspoon prepared mustard
  • 8 oz. can flaky refrigerator biscuits
  • Brown sugar substitute to equal 1 tablespoon brown sugar
  • 1.5 oz. shredded low-fat Cheddar cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Preheat oven to 400°F.
  2. Brown ground turkey or beef, green pepper, and onion in a skillet sprayed with cooking spray.
  3. Add tomato sauce, brown sugar substitute, mustard, salt, and pepper; simmer for 5 minutes.
  4. Place each biscuit in an ungreased muffin cup, pressing dough up sides to the edge of the cup.
  5. Spoon meat mixture into each biscuit-lined muffin cup.
  6. Bake for 10 to 15 minutes or until golden brown.
  7. Sprinkle shredded low-fat Cheddar cheese on top and continue baking until cheese melts.
