Barbecue Biscuit Cups

Ingredients
- 8 oz. ground turkey or beef ⓘ
- 1/4 cup green pepper, chopped ⓘ
- 1/4 cup onion, minced ⓘ
- 1 cup tomato sauce ⓘ
- 1 teaspoon prepared mustard ⓘ
- 8 oz. can flaky refrigerator biscuits
- Brown sugar substitute to equal 1 tablespoon brown sugar ⓘ
- 1.5 oz. shredded low-fat Cheddar cheese ⓘ
- 1/2 teaspoon salt ⓘ
- 1/8 teaspoon pepper ⓘ
Instructions
- Preheat oven to 400°F.
- Brown ground turkey or beef, green pepper, and onion in a skillet sprayed with cooking spray.
- Add tomato sauce, brown sugar substitute, mustard, salt, and pepper; simmer for 5 minutes.
- Place each biscuit in an ungreased muffin cup, pressing dough up sides to the edge of the cup.
- Spoon meat mixture into each biscuit-lined muffin cup.
- Bake for 10 to 15 minutes or until golden brown.
- Sprinkle shredded low-fat Cheddar cheese on top and continue baking until cheese melts.
