Ingredients

  • 1 lb. ground beef
  • 2 qt. water
  • 1/2 cup barley
  • 6 beef bouillon cubes
  • 2 cups sliced carrots
  • 1 cup chopped onion
  • 1.5 cups chopped celery
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 package frozen lima beans

Instructions

  1. Brown the ground beef in a large pot over medium heat.
  2. Add water, salt, pepper, barley, and beef bouillon cubes to the pot.
  3. Bring to a boil, then reduce heat and simmer, covered, for 30 minutes.
  4. Add sliced carrots, chopped celery, chopped onion, and tomato sauce to the soup.
  5. Simmer uncovered for another 30 minutes.
  6. Stir in frozen lima beans and cook for an additional 15 minutes before serving.
