Ingredients

  • 1 lb. small white navy beans
  • 2 onions
  • 2 bay leaves
  • 1/2 tsp. lite salt
  • 1/4 tsp. pepper
  • 2 c. ketchup
  • 2 c. light brown sugar
  • 1/3 c. vinegar
  • 3 Tbsp. Worcestershire sauce
  • 1 Tbsp. dry mustard

Instructions

  1. Soak the navy beans in cold water, covered, overnight until water covers beans completely.
  2. Drain beans in a colander and rinse under cold water.
  3. Transfer beans to a 6-quart kettle.
  4. Add 5 cups of water, onions, bay leaves, lite salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender, adding more water if needed.
  6. Remove bay leaves from the bean mixture.
  7. Preheat oven to 350°F (175°C).
  8. Drain the bean mixture, reserving the liquid.
  9. Transfer beans to a 4-quart baking dish sprayed with nonfat cooking spray.
  10. Combine ketchup, light brown sugar, vinegar, Worcestershire sauce, and dry mustard; mix well.
  11. Pour the sauce over the beans and stir to combine.
  12. Add enough of the reserved liquid to cover the beans.
  13. Bake uncovered for 1 1/2 to 2 1/2 hours, until heated through and bubbly.
