Basic Baked Beans

- Soak the navy beans in cold water, covered, overnight until water covers beans completely.
- Drain beans in a colander and rinse under cold water.
- Transfer beans to a 6-quart kettle.
- Add 5 cups of water, onions, bay leaves, lite salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender, adding more water if needed.
- Remove bay leaves from the bean mixture.
- Preheat oven to 350°F (175°C).
- Drain the bean mixture, reserving the liquid.
- Transfer beans to a 4-quart baking dish sprayed with nonfat cooking spray.
- Combine ketchup, light brown sugar, vinegar, Worcestershire sauce, and dry mustard; mix well.
- Pour the sauce over the beans and stir to combine.
- Add enough of the reserved liquid to cover the beans.
- Bake uncovered for 1 1/2 to 2 1/2 hours, until heated through and bubbly.
