Ingredients

  • 1/2 cup butter
  • 10 eggs
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 16 ounces large curd cottage cheese
  • 1 pound shredded Monterey Jack cheese
  • mushrooms (optional)

Instructions

  1. Melt the butter in a bowl.
  2. Whip the eggs into the melted butter.
  3. Add the flour, baking powder, salt, cottage cheese, and half of the shredded Monterey Jack cheese to the mixture.
  4. Mix well until combined.
  5. Stir in optional ingredients such as vegetables (mushrooms, green chilies, zucchini, etc.).
  6. Pour the mixture into a greased baking dish.
  7. Bake at 350°F (175°C) for 45 minutes or until set and golden on top.
