- Blend the sifted confectioners sugar and baking powder with the flour using a wire whisk.
- Place the mixture on a pastry board and make a well in the center.
- Break the eggs into the well and add the vanilla extract.
- Knead the dough well for about 5 minutes until smooth, adding a little flour if the dough is too sticky or soft.
- Pinch off small bits of dough about the size of a small apricot and shape into rings or strips as desired.
- Place the shaped dough onto a lightly greased cookie sheet.
- Bake in a preheated 450°F oven for 10 minutes or less until golden brown.
- Watch carefully to prevent over-browning.
- Once cooled, sprinkle the cookies with powdered sugar.
