Delightful Italian cookies with a crisp exterior and tender interior, flavored with vanilla and dusted with powdered sugar, perfect for festive occasions or teatime treats.

Ingredients

  • 5 cups flour
  • 1 1/2 cups sifted confectioners sugar
  • 3 eggs
  • 2 tablespoons baking powder
  • 1 cup margarine or butter
  • 1 tablespoon vanilla

Instructions

  1. Blend the sifted confectioners sugar and baking powder with the flour using a wire whisk.
  2. Place the mixture on a pastry board and make a well in the center.
  3. Break the eggs into the well and add the vanilla extract.
  4. Knead the dough well for about 5 minutes until smooth, adding a little flour if the dough is too sticky or soft.
  5. Pinch off small bits of dough about the size of a small apricot and shape into rings or strips as desired.
  6. Place the shaped dough onto a lightly greased cookie sheet.
  7. Bake in a preheated 450°F oven for 10 minutes or less until golden brown.
  8. Watch carefully to prevent over-browning.
  9. Once cooled, sprinkle the cookies with powdered sugar.
