Ingredients

  • 2 lb. veal or beef bones
  • oil
  • 2 large carrots
  • 2 celery stalks
  • 1 onion, cut in half with skin left on and stuck with 3 cloves
  • 2 qt. cold water
  • 2 bay leaves
  • salt
  • peppercorns
  • pinch of leaf thyme, crumbled
  • 3 Tbsp. tomato puree

Instructions

  1. Rub the veal or beef bones with oil and place in a 400° oven for 20 minutes.
  2. Rub the carrots, celery, and onion with oil.
  3. Roast everything for 20 minutes, until it is a rich, dark brown.
  4. Remove from the oven.
  5. Place the roasted bones and vegetables in a pot with the remaining ingredients.
  6. Bring to a boil.
  7. Skim off foam.
  8. Simmer for 3 to 4 hours to reduce by one-third.
  9. Strain and freeze.
