Ingredients

  • 1 rabbit
  • 1 small onion, sliced
  • 1 stalk celery, diced
  • 2 bay leaves
  • 2 Tbsp. cooking oil
  • 2 Tbsp. fat
  • 2 Tbsp. flour
  • 2 c. hot water
  • 1 tsp. salt
  • 1 Tbsp. capers
  • 1 Tbsp. Worcestershire
  • 12 pitted olives
  • chopped parsley

Instructions

  1. Place rabbit in a baking pan and add sliced onion, diced celery, and bay leaves.
  2. Brush the rabbit with oil and roast in a 350°F oven for 45 minutes.
  3. Remove the meat from the pan, add fat and flour, and stir until the sauce becomes a rich brown.
  4. Add hot water, stirring well to create a smooth sauce.
  5. Add salt, Worcestershire sauce, capers, and olives to the sauce.
  6. Return the meat to the pan, cover tightly, and roast in the 350°F oven for an additional 80 minutes or until tender.
