Basic Muffin Mix

- Heat oven to 375°F (190°C).
- Mix margarine, sugar, eggs, and vanilla. Beat well for 5 minutes until light and fluffy.
- Add the baking powder to the flour.
- Mix baking soda and yogurt; when it foams up, add half of it to the creamed mixture along with half the flour. Blend well.
- Add the remaining yogurt and flour mixtures. The batter will be very thick.
- Place the batter into a 12-muffin tin.
- Bake for 20 to 25 minutes until golden and a toothpick inserted in the center comes out clean.
