Ingredients

  • 1/3 cup margarine
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 3 tablespoons baking powder
  • 2 1/4 cups all-purpose flour
  • 1 cup plus 3 1/2 tablespoons plain yogurt
  • 1 teaspoon baking soda

Instructions

  1. Heat oven to 375°F (190°C).
  2. Mix margarine, sugar, eggs, and vanilla. Beat well for 5 minutes until light and fluffy.
  3. Add the baking powder to the flour.
  4. Mix baking soda and yogurt; when it foams up, add half of it to the creamed mixture along with half the flour. Blend well.
  5. Add the remaining yogurt and flour mixtures. The batter will be very thick.
  6. Place the batter into a 12-muffin tin.
  7. Bake for 20 to 25 minutes until golden and a toothpick inserted in the center comes out clean.
