Basil Cheese Spread

Ingredients

  • 1/2 lb. cream cheese
  • 1/2 lb. goat cheese
  • 1 lb. (4 sticks) butter
  • 1 cup pesto
  • basil sprigs
  • 1/4 cup toasted pine nuts

Instructions

  1. In a food processor, blend cream cheese, goat cheese, and butter until smooth.
  2. Line a 1-quart souffle dish with damp cheesecloth, allowing the excess to hang over the sides.
  3. Spread about 1/4 of the cheese mixture in the souffle dish, followed by 1/3 of the pesto.
  4. Repeat with the remaining cheese and pesto, ending with a layer of cheese on top.
  5. Fold the ends of the cheesecloth over the top and smooth the surface with fingers.
  6. Chill for 3 hours or until firm.
  7. Unfold the cheesecloth. Press pine nuts around the sides of the spread and garnish with basil leaves.
  8. Refrigerate; cheese keeps for 7 to 10 days.
