Ingredients

  • 1 lb Italian sausage
  • 4 small potatoes, peeled and diced
  • 2 Tbsp celery leaves
  • 2 beef bouillon cubes
  • salt to taste
  • 1/4 tsp pepper
  • 1/2 cup chopped onion
  • 2 cans diced tomatoes with Italian seasoning
  • 1/4 cup chopped parsley
  • 1 cup sliced celery
  • 1 1/2 cups water
  • 1 medium bay leaf

Instructions

  1. Brown the Italian sausage with chopped onions in a skillet and drain excess fat.
  2. Combine the cooked sausage, onions, potatoes, celery, celery leaves, diced tomatoes, beef bouillon cubes, bay leaf, water, salt, and pepper in a large pot.
  3. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 20-30 minutes.
  4. Remove the bay leaf before serving, and garnish with chopped parsley if desired.
