Basque Style Hake

Ingredients

  • 4 loins Hake
  • flour
  • cooking oil
  • 4 cloves garlic chopped
  • 1 onion chopped
  • 1 cup white wine
  • fish stock
  • 1 bunch parsley chopped
  • peas
  • salt
  • 7 ounces clams
  • 3 1/2 ounces shrimp

Instructions

  1. Season the fish, cover with flour, and fry. Once golden brown, remove from the stove and set aside.
  2. In that same saucepan, fry the chopped garlic and then the onion. Once golden brown, add the wine, fish stock, chopped parsley, peas, and salt to taste. Cook for 15 minutes; the sauce should thicken.
  3. Place the fish in the sauce, along with the clams and shrimp, and cook over medium heat for 2 minutes.
