Ingredients

  • 1 Tbsp. corn oil
  • 1 medium onion, chopped
  • 1 large clove garlic, chopped
  • 1 (8 oz.) can tomato sauce
  • 2 (15 oz. each) cans kidney beans or 3 cups red beans
  • 1 Tbsp. minced parsley
  • 2 Tbsp. green onion, chopped
  • 4 cups liquid (bean liquid and water)
  • salt and pepper to taste
  • 1 cup cooked small macaroni
  • 2 Tbsp. imitation bacon chips or crisp bacon pieces

Instructions

  1. In oil, sauté onion, green pepper, and garlic for 5 minutes.
  2. Add tomato sauce and simmer for 30 minutes, adding water as needed and stirring frequently.
  3. Add drained beans, parsley, green onion, and liquid (bean liquid and water). Season to taste.
  4. Cook for 10 minutes.
  5. Stir in cooked macaroni and simmer for 5 more minutes.
  6. Sprinkle with bacon chips or crisp bacon pieces before serving.
