Ingredients

  • 1 frying chicken, cut up
  • 1/2 cup buttermilk
  • 1 stick butter
  • 1 cup flour
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 teaspoons paprika
  • 1/4 teaspoon leaf thyme
  • 2 tablespoons dried minced onion

Instructions

  1. Dip chicken pieces into buttermilk, then into a mixture of flour, salt, pepper, paprika, thyme, and minced onion.
  2. Melt butter in a shallow baking pan in a 400°F oven.
  3. Remove the pan from the oven and place the coated chicken in it, turning to coat with butter.
  4. Bake in a single layer, skin side down, for 30 minutes.
  5. Turn the chicken pieces and bake for an additional 30 minutes.
