Ingredients

  • 1 can black beans, drained
  • 1 can black-eyed peas, drained
  • 1 can white corn, drained
  • 2 cans Rotel, with juice
  • 1 can roasted garlic diced tomatoes
  • 1 medium red onion, finely chopped
  • 6 green onions
  • 1 bunch cilantro, leaves only
  • 1 pkg. zesty Italian salad dressing mix
  • 1/3 cup vinegar

Instructions

  1. Mix together the drained black beans, black-eyed peas, white corn, Rotel with juice, roasted garlic diced tomatoes, chopped red onion, sliced green onions, and chopped cilantro in a large bowl.
  2. Add the zesty Italian salad dressing mix and vinegar to the mixture.
  3. Stir well to combine all ingredients thoroughly.
  4. Refrigerate for several hours or overnight to allow flavors to meld before serving.
