Ingredients

  • 1 1/2 lb. ground beef
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 2 cups water
  • 1 (16 oz.) can tomatoes, undrained
  • 1 (6 oz.) can tomato paste
  • 1 tablespoon sugar
  • 3/4 cup barley
  • sour cream (optional)

Instructions

  1. In a large skillet, brown ground beef, green pepper, onion, and garlic.
  2. Drain excess fat from the skillet.
  3. Add water, tomatoes, tomato paste, sugar, and barley to the skillet.
  4. Bring the mixture to a boil, then reduce heat to simmer.
  5. Cover and cook for 50 to 60 minutes or until barley is tender, stirring occasionally.
  6. Serve hot, optionally topped with sour cream.
