Ingredients

  • 1 1/2 lb. ground beef
  • 1 1/2 cups brown rice
  • 4 cups water
  • 4 beef bouillon cubes
  • 1 1/2 teaspoons curry powder
  • 1 large can pineapple chunks
  • 1 can mushrooms, drained

Instructions

  1. Brown ground beef and onion in a skillet.
  2. Drain off the fat.
  3. Combine all ingredients except pineapple chunks in a large casserole dish.
  4. Bake at 350°F (175°C) for 1 1/2 hours.
  5. During the last 10 minutes, pour pineapple chunks with juice over the casserole.
  6. Return to oven and bake for an additional 10 minutes.
