Beef And Mushroom Platter

Ingredients
- 2 c. water ⓘ
- dash of salt ⓘ
- few drops of lemon juice ⓘ
- 1 large white onion, peeled, thinly sliced, and separated into rings ⓘ
- 15 large fresh mushrooms ⓘ
- 1 1/2 lb. cold cooked roast beef, thinly sliced ⓘ
- 1/2 c. red wine vinegar ⓘ
- 2 tsp. Dijon mustard ⓘ
- 1 tsp. salt ⓘ
- 1/4 tsp. dried crushed marjoram ⓘ
- 1/4 tsp. dried dill weed or chervil ⓘ
- 1/4 tsp. pepper
- 1 c. salad oil ⓘ
Instructions
- In a saucepan, combine water, salt, and lemon juice; bring to a boil.
- Drop in onion rings and remove immediately.
- Drain onions well on paper towels.
- Slice mushrooms into thick lengthwise pieces.
- Arrange meat, onions, and mushrooms in a 13 x 9 x 2-inch dish.
- In a bowl, stir together red wine vinegar, Dijon mustard, remaining salt, dried marjoram, dried dill weed or chervil, and pepper.
- Gradually blend in salad oil to the vinegar mixture.
- Pour the dressing over the beef and vegetables.
- Cover with plastic wrap and chill several hours or overnight, basting occasionally.
- Sprinkle parsley on top before serving.
- Serve on sandwich rolls.
