Ingredients

  • 2 c. yellow cornmeal
  • 1 c. sifted flour
  • 1/2 c. sugar
  • 1 tsp. salt
  • 1/2 stick butter
  • 2 tsp. baking powder
  • 2 c. milk
  • 2 eggs
  • 1 pkg. beef bacon

Instructions

  1. Fry bacon in a frying pan and break into very small pieces.
  2. Preheat oven to 350°F (175°C).
  3. Combine cornmeal, sifted flour, sugar, salt, and baking powder; mix thoroughly.
  4. Add milk, stirring slowly to combine.
  5. Add eggs and blend well.
  6. Melt butter in the baking pan and pour into the cornmeal batter; mix well.
  7. Add the bacon pieces and stir very well.
  8. Pour the batter into the prepared baking pan and bake for 30 minutes or until a toothpick inserted comes out clean.
