Ingredients

  • 1 1/2 lb. ground beef
  • 1 medium onion, chopped
  • 1 (1 lb.) can refried beans
  • 1 tsp. salt
  • 1/8 tsp. garlic powder
  • 1/3 cup taco sauce
  • 1 cup pitted ripe olives, quartered
  • 2 (10 oz.) cans enchilada sauce
  • salad oil
  • 12 corn tortillas
  • 3 cups shredded Cheddar cheese

Instructions

  1. Crumble ground beef in a frying pan and add chopped onion.
  2. Saute until the beef is browned and the onion is tender.
  3. Drain off excess grease. Stir in refried beans, salt, garlic powder, taco sauce, and quartered olives; heat until bubbly.
  4. Heat the enchilada sauce and pour half into an ungreased shallow 3-quart baking dish.
  5. In a skillet, heat salad oil about 1/4-inch deep.
  6. Dip tortillas, one at a time, in hot oil to soften; drain quickly.
  7. Place 1/3 cup of beef filling on each tortilla and roll to enclose the filling.
  8. Place seam side down in the baking dish. Pour the remaining sauce over all and top with shredded Cheddar cheese.
  9. Bake uncovered at 350°F for 20 to 25 minutes until cheese is melted and bubbly.
