- Crumble ground beef in a frying pan and add chopped onion.
- Saute until the beef is browned and the onion is tender.
- Drain off excess grease. Stir in refried beans, salt, garlic powder, taco sauce, and quartered olives; heat until bubbly.
- Heat the enchilada sauce and pour half into an ungreased shallow 3-quart baking dish.
- In a skillet, heat salad oil about 1/4-inch deep.
- Dip tortillas, one at a time, in hot oil to soften; drain quickly.
- Place 1/3 cup of beef filling on each tortilla and roll to enclose the filling.
- Place seam side down in the baking dish. Pour the remaining sauce over all and top with shredded Cheddar cheese.
- Bake uncovered at 350°F for 20 to 25 minutes until cheese is melted and bubbly.
