Beef-Broccoli-Potato Bake

A hearty casserole combining seasoned ground beef, tender broccoli, and creamy scalloped potatoes, perfect for comforting family dinners and easy to prepare ahead.

Ingredients

  • 1 lb ground beef
  • 16 oz frozen broccoli
  • 2 boxes scalloped potatoes
  • 16 oz sour cream
  • 6 cups boiling water
  • 2 Tbsp butter

Instructions

  1. Brown the ground beef in a skillet until fully cooked.
  2. Place the scalloped potatoes in a 2 1/2-quart pan with boiling water.
  3. Spread the cooked ground beef over the prepared potatoes.
  4. Break apart the frozen broccoli and layer it over the beef.
  5. Sprinkle the powdered mixture from the scalloped potatoes over the broccoli.
  6. Add butter to 1 cup of boiling water and stir until melted.
  7. Mix in the sour cream into the buttered water and pour this mixture over the casserole.
  8. Pour the remaining boiling water over the casserole.
  9. Bake at 400°F (200°C) for 50 to 60 minutes until hot and bubbly.
