Ingredients

  • 1 lb. cubed stewing beef
  • 1 (10 oz.) can beef broth
  • 1 soup can water
  • 1/2 tsp. salt
  • 1/4 cup chopped onion
  • 1 (14 oz.) can beets, cut in strips and drained
  • 1 medium potato, diced
  • 1 carrot, cut in sticks
  • 2 celery stalks, sliced
  • 2 cups shredded cabbage
  • 1 cup canned tomatoes
  • 1 tsp. garlic powder
  • 2 Tbsp. flour
  • 2 Tbsp. lemon juice
  • 1/2 tsp. pepper
  • 1 tsp. dill seed
  • 1/2 cup sour cream
  • croutons (optional)

Instructions

  1. In a large covered saucepan, simmer the cubed stewing beef in beef broth and water for 45 minutes or until tender.
  2. Stir in salt, chopped onion, drained beets, diced potato, carrot sticks, and sliced celery; cover and simmer for 15 minutes or until vegetables are tender.
  3. Add shredded cabbage to the pot and cook until just tender.
  4. Combine flour and lemon juice to form a slurry; slowly add it to the soup, stirring constantly.
  5. Stir in canned tomatoes, garlic powder, pepper, dill seed, and sour cream. Cook, stirring occasionally, until the mixture thickens.
  6. Serve hot, garnished with additional sour cream and croutons if desired.
