Ingredients

  • 1 lb. ground beef
  • 2 Tbsp. fat
  • 1 large onion
  • 1 green pepper
  • 1 cup celery
  • 1 (No. 2) can tomatoes
  • 1 small can mushrooms and juice
  • salt and pepper

Instructions

  1. Cook the ground beef in 2 tablespoons of fat until browned.
  2. Add chopped onion, green pepper, and celery; cook until vegetables are tender.
  3. Stir in the tomatoes (with juice) and small can of mushrooms (with juice).
  4. Season with salt and pepper to taste.
  5. Add washed uncooked rice to the mixture.
  6. Cook in a pressure cooker on high until it steams well, then cover and cook for 10 minutes.
  7. Turn off the heat and let the pressure go down naturally. Alternatively, cook slowly in a regular pan to prevent rice from sticking.
  8. Serve hot, preferably with a fruit salad and rye bread.
