Ingredients

  • 3 to 4 lb. boneless chuck roast
  • 3 large potatoes peeled and quartered
  • 1 large onion sliced
  • 2 to 3 Tbsp. flour
  • 1 Tbsp. chili sauce
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. vinegar
  • 1 Tbsp. sugar
  • 1 Tbsp. prepared mustard

Instructions

  1. Trim all excess fat from the roast.
  2. Place potatoes in the bottom of the crock-pot.
  3. Lay sliced onions over the potatoes.
  4. Place the roast over the potatoes.
  5. Pour 1/2 cup water over the roast.
  6. Make a paste from the remaining ingredients: 2 to 3 tablespoons of flour, chili sauce, Worcestershire sauce, vinegar, sugar, and prepared mustard, then spread the paste over the roast.
  7. Cover and cook on low setting for 8 to 10 hours.
  8. Serve with a tossed salad, rolls, and tea.

Tips & Substitutions

For a richer flavor, consider browning the chuck roast in a skillet before placing it in the crock-pot. If you want a thicker sauce, add more flour to the paste. You can substitute the chuck roast with a brisket or even a pork roast for a different taste. For a spicier kick, add chopped jalapeños or a dash of cayenne pepper to the paste.

Serving Suggestions

Serve Beef Diablo with a side of tossed salad and warm rolls for a complete meal. This dish pairs beautifully with Potato Yeast Rolls, providing a comforting complement to the robust flavors of the beef. A refreshing drink like Prayer Meeting Punch can also enhance the dining experience, making it a satisfying family meal.

Storage & Reheating

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place the beef and potatoes in a saucepan over low heat, adding a splash of water or broth to keep it moist. Alternatively, you can microwave individual portions until heated through, making sure not to overcook the potatoes.

Frequently Asked Questions

Can I use other cuts of beef for this recipe?

Yes, while chuck roast is ideal for its tenderness and flavor, you can use other cuts like brisket or a round roast. Just remember that cooking times may vary, so adjust accordingly to ensure the meat is tender and fully cooked.

What can I do if I don't have all the ingredients?

If you're missing some ingredients, you can improvise. For instance, if you don't have Worcestershire sauce, soy sauce can work as a substitute. Additionally, any type of vinegar can replace the specified vinegar, and you can adjust the sugar based on your taste preference.

Is this recipe suitable for meal prep?

Absolutely! Beef Diablo is perfect for meal prep as it stores well and flavors deepen over time. Prepare a larger batch to enjoy throughout the week. Just remember to divide into smaller portions for easy reheating, making it convenient for busy days.
