Ingredients

  • 1 lb ground beef
  • 1 1/2 cups grated Cheddar cheese
  • 1/2 cup chopped onion
  • 1 can cream of mushroom soup
  • 1 can tomato soup
  • 1 (10 oz) can mild enchilada sauce
  • 12 flour tortillas
  • 1 package taco seasoning

Instructions

  1. Brown the ground beef in a skillet and drain excess fat.
  2. Add chopped onion and taco seasoning to the beef, cooking according to package directions.
  3. Stir in 1/2 cup grated Cheddar cheese into the meat mixture and set aside.
  4. Combine the cream of mushroom soup, tomato soup, and enchilada sauce in a bowl.
  5. Spread a heaping tablespoon of meat mixture onto each tortilla and roll up.
  6. Place the filled tortillas seam side down in a 9 x 13-inch baking dish.
  7. Pour the soup and enchilada sauce mixture over the assembled tortillas.
  8. Top with the remaining cheese.
  9. Bake in a preheated 350°F oven for 25 to 30 minutes until bubbly and heated through.
