Ingredients

  • 1 lb. ground chuck
  • 1 onion, chopped
  • 1 (14 1/2 oz.) can chopped tomatoes
  • 1 (10 oz.) can diced tomatoes and green chiles
  • 2 tsp. sugar
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 (6 oz.) can tomato paste
  • 1 (6 oz.) pkg. medium egg noodles
  • 1 c. sour cream
  • 1 c. sharp Cheddar cheese
  • 1 c. Parmesan cheese

Instructions

  1. Cook ground chuck and chopped onion; drain excess fat.
  2. Put chopped tomatoes, diced tomatoes and green chiles, sugar, salt, pepper, and tomato paste in a blender and mix until smooth.
  3. Add the blended mixture to the cooked ground beef and simmer for 30 minutes.
  4. Cook medium egg noodles according to package instructions and drain.
  5. Stir together cooked noodles and sour cream.
  6. Spray a 13 x 9-inch dish with cooking spray.
  7. Layer the noodle mixture in the bottom of the dish.
  8. Top with the meat mixture.
  9. Sprinkle with shredded Cheddar and Parmesan cheeses.
  10. Cover the dish with foil and bake at 350°F for 35 minutes.
  11. Uncover and bake for an additional 5 minutes until cheese is bubbly and golden.
